Ingredients
- 680 grams White Bread
- 900 ml milk
- 1000 grams luxury mixed dried fruit
- 200 grams Shredded suet
- 350 grams demerara sugar
- 8 tea spoons mixed spice
- 4 med eggs beaten
- 20 grams approx butter to grease tin
- grated nutmeg for sprinkling
- caster sugar for sprinkling

Pre heat oven to 180C,350F,or Gas mark 4
Into a large mixing bowl add the bread ,broken up into small pieces.
Pour on the milk , and mix together.
Leave to soak for 10 mins
Add the beaten eggs , and mixed spice, and beat well to get rid of any large lumps of bread.
I use an electric hand blender to do this.
Next stir in the suet,the demerara sugar and finally the mixed fruit.
Make sure it is all stirred in well, and then pour the mixture into a large greased oblong baking tin
approx 24cm x 32 cm
sprinkle with a little nutmeg, and then place in the middle of the oven for about 2 hours.
Check while cooking to make sure the top isnt getting to brown.You can cover with foil,if it is.
When cooked sprinkle with caster sugar, and allow to cool.
Ordinary mixed dried fruit can be used ,or you can add in glace cherries ,or glace pinapple for a change .Vegatable suet can be used instead of the shredded suet, and you can also brown bread, instead of white.
Can be frozen.
Chef's Tips
If freezing , leave the caster sugar off until you defrost it as it can go a bit sticky.
This also tastes really nice heated up in the microwave.
This makes a very large size pudding.and you could halve the quantities,but would probably have to adjust the cooking time. I never seem to have trouble getting it all eaten.

Glad you enjoyed it.I made one last week for my partner to take in to work for one of his friends. Every one seems to like bread pudding,and the smell of it cooking makes your mouth water.
I always used to use up stale bread by making a bread pudding and used a recipe passed to me from my mum. I haven't made it for ages, couldn't find recipe so looked online. This is the one which is most similar, but instead of mixed spice I just used some nutmeg and lemon pee and melt the marg. Delicious cold as you say and even healthier with brown bread and sugar.
I used half the mixture just incase I didn't enjoy it, I now wish I had made double!!! it did not last long in our house!!!
