Ingredients
- 500g Chicken Wings (cut into 3 pieces at the joint)
- 375ml Mirin
- 250ml Sake
- 375ml Kikkoman Soy sauce
- 55g sugar
- 3tsp Kuzu starch / arrowroot

1. Grill the chicken wing pieces until dark golden and starting to blacken slightly.
2. Bring the Mirin and sake to a boil in a saucepan and add the soy and sugar until dissolved.
3. Add the wing pieces and simmer for 30 mins. Cool for a further 30 mins. Strain the sauce - the wings can be eaten as a dish in their own right.
4. Pour some sauce into a bowl and add the crushed kuzu, mix until dissolved and heat in a pan until it boils and becomes thick and glossy - remove from the heat and cool.
