- 1/5 cup Of low fat tasty cheese or naturally low in fat mozzarella. The full fat cheese is too heavy for this recipe.
- To taste Salt and cracked pepper
- Handful Of the green part of shallots
- Pinch or more mixed herbs
- 2 slices Toast
- To taste Butter

This is an easy recipe I like to make on very early mornings to send the husband off to work with a full belly when I don't have time to make a full breakfast.

Cooking time can be 1 minute to 5 minutes depending on what wattage microwave you have and how wet you like your omelet.
I take 2 to 3 eggs from the coop and whip them up with 3 teaspoons of milk, a pinch of mixed herbs and a 1/5 of a cup of grated tasty cheese. I add the sliced shallots grown from our garden and picked that morning then spray a bowl down with olive oil. Pour the mixture in and cook. Check it every 45 seconds to mix and serve with toasted buttered bread. This is a nice recipe as the eggs are light and fluffy.
