Cottage Pie with Sweet Potato, Bubble & Squeak Topping
Ingredients
- 500 grms Lean Minced Beef
- 1 medium onion. chopped
- 1 Carrot peeled and chopped
- 2 Stalks of celery, sliced
- 3 medium potatoes peeled & chopped
- 1 medium sweet potato. peeled and chopped
- 150 grms Sliced green cabbage
- 1.5 tbspns plain flour
- 1.5 tbspns tomato puree
- 1.5 tbspns Worcestershire sauce
- 500 mls Water
- 1 Rich Beef Stock gel
- splash of milk
- Knob of butter
- 2 sprigs fresh thyme
- 1 sprig fresh oregano

Description
I have adapted this recipe from one used by my son in Year 7. I thought the addition of sweet potato to the mash would give it an extra dimension.
Method

1. Preheat oven to 200 deg.C.
2. Put potato and sweet potato into a large saucepan of water, bring to boil and simmer for 20 minutes until soft.
3. In a large frying pan dry fry minced beef, carrot, onion and celery until the meat is brown. Stir in the flour, tomato puree, Worcester sauce and stock gel. Stir again until thoroughly mixed and add the water.
4. Bring to boil, reduce heat and simmer for 15 minutes until the carrot is soft.
5. Place meat mixture into a large ovenproof dish and set aside.
6. 5 minutes before potatoes are cooked, add the cabbage to the water.
7. Drain potatoes and cabbage, return to saucepan and mash together, adding a splash of milk and a knob of butter, cream together well.
8. Spoon the mash over the meat mix, place into the oven and cook for 25-30 minutes until golden brown.
Chef's Tips
Instead of cabbage, try using sliced Spring or Winter Greens, kale or other types of cabbage.
