Ingredients

200g Pasta (fusilli or Penne is best)
200g Houmous (preferably reduced fat)
250g Large Flat Mushrooms (or any other type to taste)
1 Large onion. chopped finely
50ml soya milk
2 Cloves of garlic finely chopped
1 tbsp olive oil

Description

This recipe is from a student cook book from many years ago. It was the first time I ever bought houmous, never looked back!

Method

1
1 - Boil water in the kettle and add to pasta and bring to simmer.
2 - In a large pan fry the onion in the olive oil until it starts to brown, add the garlic and fry for a another minute.
3 - Add the chopped mushrooms and fry until soft, add salt and pepper to taste.
4 - Add the houmous any soya milk to the pan, stir for a few minutes, don't let it get dry.
5 - Drain the pasta and stir into the sauce mixure.
6 - Serve.
