- 2 rashers of bacon
- Tablespoon Creme Fraiche or soured cream
- 2 tablespoons pesto
- 200 - 300 grams Pasta ( any type )
- Some torn basil
- Ground pepper

Description
An easy but rather tasty supper for using up even a small amount of leftover roast chicken.

Put enough pasta for two on to boil as usual. Any type you like but penne, fusilli and conchiglie work very well.
In a frying pan with a little oil, put as much leftover chicken as you have or fancy. Warm through and then add the bacon, chopped up. And keep frying til browned.
By now your pasta sjhould be cooked al dente. Take off the heat and drain. Now, add pesto and creme fraiche to cover the pasta.
Plate up pasta. Sprinkle cooked chicken and bacon on the pasta, add torn basil and a grind of pepper. Serve. Use a bit of grated parmesan if you fancy.
Chef's Tips
Of course, if you want to do this for one or even more, just tweak the quantities. It's not a recipe that requires a great deal of precision.
