Ingredients
- 85g / 3oz Rice Flour
- 85g / 3oz Polenta
- 85g /3oz Potato Flour
- 1tsp Xanthan Gum
- Salt
- 140g / 5oz Butter
- 1 Egg, mixed with 2 tbsp cold water
- 1 Orange, zest only
- 1 tsp Brandy
- 3 tsp Icing Sugar
- 8oz / 225g Fresh ripe Pears, peeled & chopped
- Β½ Lemon, zested
- Β½ Orange, zested
- 8oz/225g Mixed dried fruit
- 2oz/50g Chopped candid peel
- 2oz/50g Glace cherries
- 1oz/25g Flaked almonds
- Β½ tsp Mixed spice
- ΒΌ tsp Ground nutmeg
- ΒΌ tsp Ground ginger
- 2 tbsp Brandy

For the Pastry
Heat Oven 160Β°C/300Β°F
Mix the egg and water together.
Sift polenta, flours, xanthan gum and salt and rub in butter.
Stir in the orange zest, brandy and icing sugar
Make a well in the centre of the mix.
Add the egg mixture to the well and form a dough with a fork.
Kneed, wrap and chill for 1 hour.
For the Mincemeat
Mix the remainder of the ingredients together in a large bowl. Set aside for 1-2 hours to allow the flavours to mingle. Store in an airtight jar until ready to use.
To cook, heat oven 160Β°C/300Β°F and cook for 20min or until pastry is golden brown. Enjoy!
