Ingredients
- 1 small Pork fillet. cut into thin diagonal slices
- 1 small tin pineapple. drained and diced
- Β½ small red pepper. diced
- Β½ small red onion. diced
- 1 tbsp soy sauce
- 1 tbsp vinegar. white wine if you have it
- 1 tsp sugar
- 2 cm piece fresh ginger. peeled & finely chopped
- 1 small green or red chillis. deseeded and chopped
- 1 tbsp fresh coriander chopped

1. First make the salsa. Mix the pineapple, pepper, onion and chilli in a bowl with the ginger, soy sauce, vinegar and sugar. Mix well and add the coriander
2. Cover and refrigerate for 30 minutes or so.
3. Heat a little oil in a large frying pan until very hot then add the pork and fry for about 2 minutes on each side.
4. Place the pork on plates and spoon the salsa over the top.
Chef's Tips
Don't overcook the pork otherwise it will be tough, it only needs a few minutes and will then be juicy. The salsa is gorgeous with the pork, really fresh and lovely flavours.
