Brilliant recipe to use up your leftover brioche, croissants or any bread.

Method

    1. Preheat the oven to 180C/350F/Gas mark 4.

    2. Crumble the brioche and croissants with your hand.

    3. Transfer to a bowl and add the custard, sultanas and rum and mix it until it's get creamy. Pile the mixture in a deep tray on a buttered baking paper, but don’t smooth it too much on top.

    4. Bake for 35-45 minutes until crisp and golden on top. Cut into chunks.

    5. For the sauce – melt the butter,then add the sugar, bring to the boil, and remove from the heat. Stir in the cream and add the sliced clementines pieces.
