- 500g Leftover brioche. croissants
- 350g Ready made custard
- 150g Sultanas
- 4 tbsp. Rum
- 1 tbsp. Butter
- 125g Clover butter
- 45g Brown sugar
- 2 tbsp. Cream
- 60g Clementines segments

Brilliant recipe to use up your leftover brioche, croissants or any bread.

1. Preheat the oven to 180C/350F/Gas mark 4.
2. Crumble the brioche and croissants with your hand.
3. Transfer to a bowl and add the custard, sultanas and rum and mix it until it's get creamy. Pile the mixture in a deep tray on a buttered baking paper, but donβt smooth it too much on top.
4. Bake for 35-45 minutes until crisp and golden on top. Cut into chunks.
5. For the sauce β melt the butter,then add the sugar, bring to the boil, and remove from the heat. Stir in the cream and add the sliced clementines pieces.
