Although using prawns in this version of the recipe, any firm fish (e.g. salmon) can be used
1) Mix 1 tsp turmeric with the prawn, whilst the oil in the frying pan heats. Fry the prawns for 5 minutes (or 2 minutes if using pre-cooked prawns).
2) Roughly mix the onion, tomato puree, ground coriander, turneric, chillies, fresh coriander, lemon juice and a pinch of salt in a food processor. The final paste should be quite rough.
3) With the prawns removed from the pan, fry the paste for 3-5 minutes.
4) Add the cooked prawns to the paste, and cook for 5 minutes. Add water to keep the paste moist.
5) Serve garnished with more coriander and a little finely chopped chilli.
Chef's Tips
The paste created in this recipe can be used for a vegetarian balti. Instead of prawns use vegetables - e.g. sliced potatoes fried in turmeric, par-boiled cauliflower, squash, etc.
