This recipe is quick, easy and tasty and all my family love it.

    INGREDIENTS

    4 lemon sole fillets ( from any of the great fishmongers on our East Lothian coast )
    4 tablespoons of tartar sauce ( shop bought from a jar )
    2 tablespoons of bread crumbs ( either dried and grated or shop bought )
    2 tablespoons of grated cheese ( cheddar is good, but whatever you prefer. I J Mellis Cheesemonger has a vast selection )
    Little butter or margarine
    Salt and pepper to season

    METHOD

    Preheat your grill to a medium heat.
    Line your grill pan with tin foil and spread a little butter or margarine over the foil.
    Season your fillets on both sides with salt and pepper.
    Lay the fillets on the greased foil and dot them with a little butter.
    Grill the fillets on one side only... lemon sole is a rather thin fish...for 4 to 5 minutes.
    While the fish is grilling, mix the grated cheese with the bread crumbs in a bowl.
    When the fish is grilled, spoon a tablespoon of tartar sauce over each fish, and top each with a quarter of the cheesy breadcrumb topping.
    Pop the fish back under the grill for 2 to 3 minutes until the breadcrumb and cheese mixture just turns golden brown.

    Lemon sole cooked this way are delicious and I guarantee that your diners will ask you for the recipe! I suggest you serve them with boiled baby East Lothian potatoes and a nice green vegetable or two.
