- 125g Butter
- 175g soft brown sugar
- 1 large egg
- 375g Self-raising flour
- 1 level teaspoon mixed spice
- 300ml Cold Water

A traditional Welsh fruit cake, which is deliciously moist and easy to cook.

Put the dried fruit, cherries, sugar and butter into a saucepan with the 300ml of cold water. Gently bring to the boil and simmer for 10 minutes to make the fruit swell. Allow to cool, but not to go cold.
Preheat the oven to gas mark 2/150ΒΊC/300ΒΊF/140ΒΊ fan assisted.
Beat the egg and add to the cooled fruit mixture. Fold in the flour and the mixed spice and mix thoroughly. Put the mixture into a greased and lined (with greaseproof paper) 1kg loaf tin. Bake for 1 - 1 Β½ hours.
The version made with self-raising flour can be kept for a long time!
