A rich and tasty aromatic sea bass recipe, ideal for parties or just as a really yummy dinner at home.

    To prepare the spring rolls, first broil the sea bass fillet until nicely done, season with a little salt. Cut each fillet into 6 strips and set aside. Next, take out a shallow dish and fill up to an inch deep with hot water. Place 1 sheet of rice paper in the dish and let it stand for 30 seconds, until the sheet become soft. Spread rice paper on a clean and flat surface. Place one lettuce leaf in the middle of the sheet and top it with a quarter cup of broccoli sprouts, 4 carrot strips, 4 cucumber strips and 4 bell pepper strips and 4 strips of sea bass fillet , add 4 leaves of mint (optional) to add flavor and leave a fresh taste in the mouth. Next fold in the sides of the softened rice sheets over the filling, roll it up and press the seams gently to seal the roll. Place the spring roll seam down on a serving platter lined with lettuce leaves for dΓ©cor. Continue the same process with the remaining sea bass, cover the spring rolls to prevent drying.

    Preparing the sauce:

    Take out a small deep bowl and combine all the sauce ingredients, stir vigorously until the sugar is dissolved. Serve with the fresh spring rolls.
