Easter Biscuits

Light spicy biscuits with a subtle brandy flavour and packed with white chocolate chips (instead of raisins as requested by my boys!)


1. Pre heat the oven to 180C
2. Put Greaseproof paper on 2 baking trays
3. Cream butter and sugar
4. Add egg yolks and mix thouroughly
5. Mix flours and spice and add to egg mixture
6. Add chocolate chips
7. Flatten out on a floured board and cut out thin shapes
8. Place on baking tray then brush with beaten egg whites and sprinkle with caster sugar.
9. Cook in preheated oven for 15 mins

For the biscuits

Milk ½ tbsp
Chocolate Chips 3oz
Brandy 1 tbsp
Egg Yolks 2
Caster Sugar 4oz
Soft Unsalted Butter 4oz
Mixed Spice 1 tsp
Rice Flour 2oz
Plain Flour 6oz

For the topping

Caster Sugar 2 tbsp
Egg Whites 2
