- 6 Herrings
- 1 cup Vinegar
- 1 cup Water
- Few Bay Leaves
- Few Peppercorns
- ¾ cup Sugar
- 3 Eggs

Clean and debone herrings. Boil water and vinegar together with bay leaves and peppercorns. Strain.
Beat sugar and eggs well. Add to other mixture. Stir on stove until thickened. Cool. Add 1/2 pint cream.
