Description
Give pork chops a herby zing. Marinating is such a simple way to get extra fantastic flavour into meat.

PREP - Rinse the thyme and remove the leaves from the sprigs. Reserve half the leaves and chop the rest. Peel and crush the garlic. Squeeze the lemons.

MIX - In a shallow dish, mix together the olive oil and lemon juice. Add the chopped thyme and crushed garlic.

MARINATE - Rinse the meat and pat dry with kitchen paper. Make small cuts on the fatty edges to prevent curling during cooking and slightly flatten with a rolling pin. Add the meat to the marinade, sprinkle with salt and cover with cling film. Refrigerate for 45 minutes.

GRIDDLE - Heat a griddle pan. Lift the meat out of the marinade and cook for 5 minutes on each side. Add a generous grind of black pepper and sprinkle with the remaining thyme leaves. Serve immediately.
