Preheat your oven to 200ยฐC.

Peel and dice 2 medium potatoes, 1 large sweet potato, and 2 carrots into small cubes.

Toss the diced vegetables with 2 tablespoons of olive oil, salt, and pepper, then spread them evenly on a baking sheet.

Roast the vegetables in the oven for 25 minutes or until golden and tender, stirring halfway through.

While the veggies roast, finely chop 1 onion and 2 cloves of garlic.

In a large skillet, heat 1 tablespoon of olive oil over medium heat, adding the onion and garlic, and sautรฉ until softened, about 5 minutes.

Add the roasted vegetables to the skillet and mix well, then stir in 1 teaspoon of dried thyme and 1 teaspoon of smoked paprika.
