Ingredients
- 4 chicken breasts. skinless
- 110g Soft cheese. low fat
- 2 Tblsps Pesto (any coulour)
- 4 slices ham
- basil leaves. finely sliced

This was originally my friend Louise's recipe, although now it feels like mine!

Make a deep cut horizontally in each fillet to form a pocket. Mix together the cheese and pesto and season. Spoon most of the mixture into the pockets. Wrap each fillet in a slice of ham. Place the fillets on individual pieces of foil, spoon over remaining cheese mixture and wrap and seal each piece in foil parcel. Place parcels on a baking sheet and cook for 25-30 mins at Gas Mark 6 or 200C or until chicken is tender. Serve the chicken and juices garnished with the basil and accompany perhaps with baked potatoes and salad.
did this for me and my girlfriend last night and not being the best chef unless its toast i found it really easy and my gf loved it, loved how to cheese after being in the oven turned to like a gravy, id say do enough so you can use the sauce for the veg yummy
