This delightful dish combines tender chicken pieces with vibrant courgette and broccoli, all brought together by the rich, aromatic flavors of pesto and toasted pine nuts. Perfectly cooked and seasoned, it’s a quick meal that transforms everyday ingredients into a comforting feast. Serve it over fluffy rice and finish with a sprinkle of parmesan for an extra touch of indulgenceβ€”your family and friends will be asking for seconds!

Method

    Pre-heat oven to 160 degrees.

    Wash and chop the courgette into medium slices.

  3. 3

    Wash the broccoli.

  4. 4

    Boil or steam them until al-dente taking care not to overcook.

  5. 5

    Put the pine nuts on a baking sheet and toast until brown.

  6. 6

    Remove from oven and keep aside.

  7. 7

    Heat the tablespoon of olive oil in a deep frying pan on medium-high heat.

    Stir fry the chicken pieces until lightly browned.

    Turn down the heat and add the broccoli, courgette, pine nuts and pesto and stir continuously for approx 5 mins until thoroughly cooked.

    Season with salt and pepper accordingly.

    Put the Uncle Ben's Microwaveable Rice in microwave for 2 mins.

    When ready, add the rice to the chicken in the frying pan.

    Give it all a good mix and serve onto 2 plates.

    Finish with a sprinkle of parmesan shavings.

Hmm! I put them in the oven on 160 degrees for about 4 -5 mins. If you have an AGA, it may only take 2 mins or so. Hope this helps! Corinne

Made this dish - which was delicious but first time I tried to cook the pine nuts they burnt in a nano second - have you got any handy hints on how to prevent this happening?
