Method

    Allow approx 2 medium potatoes each.
    Peel and cut into chunky chips.
    Place in pan of cold water with dash of salt. Bring to the boil and par boil for 8/9 minutes.
    Drain in a colander.
    Put a large baking tray into a hot oven (gas mark 9/ 220 c) for 5 minutes to heat up.
    Put chips into a large food bag and pour in a splash of olive oil, roll around to coat chips in oil.
    Carefully tip chips into baking tray and put in to top of hot oven for approximately 40 minutes, turning occasionally, until golden.
