Ingredients
- 125gr couscous
- 2 courgettes
- 2 medium red onions
- 6 large mushrooms
- 1 red pepper
- 2 sticks celery
- 1 head of brocoli
- 1 green pepper
- 1 tbspn olive oil
- small bunch dill. basil. coriander - fresh or dried
- 1 clove garlic
- 1 Red Chilli. deseeded and finely sliced
- salt and freshly ground black pepper

Place couscous in a bowl and pour enough boiling water over to cover with approx 1/2cm on top.
Finely chop the chilli and garlic. Chop all vegetables and place in non-stick roasting tin,and sprinkle with the chilli, garlic and shredded fresh herbs or dried herbs, add a generous sprinkling of salt & pepper. Drizzle with olive oil. Roast in 180 degrees oven for approx. 20 minutes.
Stir couscous with a fork and then add to the roasted vegetables.
You can add a sprinkling of grated cheese if you wish, or a little soy sauce or Worcestershire sauce.
Chef's Tips
This is a very healthy, low fat side dish or main dish - and very filling if you are on a diet!
This recipe has helped me to lose weight healthily in recent years and can be made using any selection of vegetables you have in the fridge.
