    Try to pick sprouts all roughly the same size... if you do this they will cook nice and evenly and there is no need to bother crossing them or anything.

    *WHY - To get that perfect sprout texture. Soft with a bit of a crunch without being undercooked in the middle! This stops the sprouts cooking, which means it can be done a couple hours before leaving them to be finished off later.

    Bring a saucepan of water to a Fast Rolling Boil and pop the Sprouts in for 6 MINUTES! Meanwhile prepare a pot or bowl of ice cold water nearby. After 6 minutes remove the sprouts and put them straight in the ice cold water!

    Grate the zest of your orange into a small bowl. Then grate a good handful of almonds into the bowl as well. You want about 3 times more walnut shaving than orange zest!. Add a dash of salt and pepper and put to one side.

    Bring a/the pan of water to the boil again. And pop the sprouts back in. Lower the heat and simmer for about 8 minutes (dependent on size). remove a sprout and squeeze lightly with two fingers. They should maintain their shape but be slightly compressible when cooked. NOTE* If any of the outer leaves begin to come away from the sprouts they are becoming overcooked!

    Put the sprouts in a warm serving dish and sprinkle over the Orange and walnut shavings whilst they are still steaming. Gently toss the sprouts with your hands (or a spoon) until evenly spread.

    If you fancy it add some off the remaining walnuts to the dish whole or halved. even is just to add to the presentation.

    ENJOY! the sprouts will have a lovely texture and you will be amazed at how the gentle aroma of orange lights up your mouth with each bite!
