Ingredients
- 2-3 Carrots Peeled and Chopped
- 1 baby turnip diced
- 1-2 sweet potato. peeled and chopped
- Β½ butternut squash deseeded peeled and cubed
- 1 -2 small/med onion chopped
- 1 small Leeks. sliced or 2 - 3 celery sticks
- 2 cloves garlic cloves. crushed/or puree
- Hefty squeeze tomato puree
- 3-5 splashes Balsamic Vinegar (optional)
- 1 tin mixed beans/chick peas in can or soaked overnight if dried
- Good handful mixed herbs/ fresh & Chopped
- 3 -4 medium potatoes (sliced thinly)*
- 2 Vegetable stock cubes
- Boiling water
- 2 teasp cornflour blended with a little cold water

Pre-heat oven to 220 degrees C or equivalent.
Put all the prepared vegetables, except the potatoes, into a large casserole dish. Add the beans. If the beans were soaked then these need to be cooked for about 10-15 mins before adding. They will cook through fully from then on in the casserole.
In a mixing jug place the garlic, tomato puree, vinegar if using, stock cubes and mix with the water to dissolve the cubes and make a stock (about 2 pts - to cover well and bit more).
Pour over vegetables and beans.Add cornflour stirring in well.
* Potatoes - if toppping with these then stir in the herbs before putting the slices on the top. Brush potatoes with melted butter about halfway through cooking time to brown nicely. Alternatively, keep the herbs back until add dumplings 20 mins before the end. Cook for 25 mins at 220 and then reduce heat to 190. Turn up heat again 20 mins before the end if adding dumplings.
Serve with any steamed green vegetable/sweetcorn.
Chef's Tips
I have added half a jar of basil,ginger and tomato pasta sauce to use it up and reduced the amount of tomato puree. I can definitely recommend it.
