Spelt baguettes have more fibre and less gluten than ordinary wheat

1. Mix yeast with 5 tbsp of the warm water, add 2 tbsp plain flour and stir to paste. Leave at room temp under a tea towel for about 20 mins.
2. Stir in the rest of the water, then add both flours and salt. Knead the dough well on a floured surface, place in a bowl, cover and leave for an hour and half.
3. Divide the risen dough into 3 pieces and knead gently. Form into 3 baguettes, place on a greased baking tray, cut some grooves into the top of the dough and bake in a pre-heated oven (200ยฐC) for about 30 mins until golden brown.
Chef's Tips
You can also use wholewheat or rye flour instead of spelt.
