Ingredients
- thumbsize piece ginger
- 2 cloves garlic
- Β½ red chilli
- 1 large chicken breast
- salt and pepper
- 2 spring onions
- samll bunch Coriander
- 1 bok choi
- 4 Shitaki Mushrooms
- 100g Egg noodles
- Groundnut Oil
- heaped tsp cornflour
- 220g tin water chestnuts
- 2 tbsp soy sauce
- 1 lime

1. Peel and finely slice giner and garlic. Finely slice chilli and spring onion. Slice chicken into finger sized strips and season with salt and pepper. Pick coriander leaves and leave to one side - finely chop stalks. Half bok choi lengthways. Tear mushrooms
2. Heat wok and once very hot add lug groundnut oil. Stir in chicken strips and cook for few mins. Add giner, garlic, chilli, coriander stalks, mushrooms and half spring onion. Fry for 30 secs. Add noodles and bok choi to boiling water and cook for 2-3 mins. Add flour, water chestnuts and their water to wok. Remove from heat and stir in 2tbsp soy sauce. Squeeze in juice of half a lime. Drain noodles and bok choi and stir into wok with a little of the cooking water. Serve with lime wedge and coriander leaves.
