Ingredients
- 2 chicken breasts or mini breast fillets
- 1 Large Potato
- 16 cherry tomatoes on the vine
- 4 cloves jumbo garlic
- 1 bell pepper (red) halved
- a big handful babyleaf salad or rocket
- a large knob butter
- olive oil
- mixed herbs
- rosemary
- salt and pepper to taste
- a splash Balsamic Vinegar
- sour cream and chive dip (optional)

Nederburg Cabernet Sauvignon Rose

Dice the potato (no need to peel) into small cubes. Fry them in olive oil on a medium heat.
Crush the garlic and chop the chicken breasts into strips. Cut grooves into the chicken so it absorbs the flavours whilst cooking. Cut a few chunks of butter and place them over the chicken, then sprinkle the garlic on top. Add a bit of salt and pepper, then put into the oven wrapped in foil to keep the chicken moist.
At the same time, chop your bell pepper in half and coat in olive oil, salt and pepper. Put that in the oven when you put the chicken in.
When there are about 10 minutes left until the chicken and potatoes are cooked, splash a bit of balsamic vinegar onto the vine tomatoes, sprinkle with a bit of salt, and pop them in the oven too.
When it's all done, serve it onto your plate, and pour the garlic butter from the chicken over it all.
Serve with a big dollop of sour cream and chive dip, and plenty of salad.
