Ingredients
- 400 gm Either Cooked Chicken or King Prawn
- 750 ml chicken stock
- 6 Cloves Garlic Crushed
- 6 Peeled and Sliced Shallot
- 2 Stalk Lemon Grass Stalks - chopped
- 10 Slice peeled Ginger
- 200 gm Straw or other Mushroom type
- 2 Tomatoes Cut into Eight
- 10 Birds Eye Chilies cut lengthways
- 45 ml Thai fish sauce
- 4 kaffir lime leaves torn
- 30 ml Lime juice
- 10 gm chopped coriander

Put stock in saucepan, bring to boil. Add garlic,shallot,lemongrass,ginger and boil for 3 mins. Add chillies,mushroom, tomato, fish sauce and kaffir leaves. Simmer for 2 mins then add chiken or prawns to heat through. Take off heat and stir in lime juice and serve dressed with corriander leaves. The recipe also works with cooked pork loin etc.
