Put all beef ingredients in to a bowl and mix, leave while you do the sauce.
To make the sauce, put all ingredients into a pan and simmer for about 10-15 minutes until it reduces by about 1/2 the quantity. (Careful how much chilli you add, especially if you've never used chilli flakes before as I find it very, very hot)
Heat wok with couple of tbls of oil, when hot add the beef and stir fry for about 5 minutes or until beef is cooked.
Finally add the reduced sauce to the wok with the beef just for a minute or so.
Serve with rice
