Best cooked in a slow cooker!
Place the pork with oil and seasoning in the bottom of the slow cooker, roughly chop the onion, mushrooms and peper, and slice the courgettes - add these to the slow cooker. Add tinned tomatoes and stock.
Leave to cook for at least four hours.
If cooking in a casserole dish cook at 190oc for at least 1 1/2hrs.
Serve with either mashed, boiled or roast pototes and any other seasonal vegetables.
