- 1x 500g butternut squash deseeded peeled and cubed
- 4x Garlic cloves. peeled and left whole
- 1x red chilli. deseeded and halved
- 1 tbsp olive oil
- 1.5 litres vegetable or chicken stock

Put the squash, garlic cloves and chilli in a roasting tray and coat with the olive oil. Roast at 200C / Gas Mark 7 for 25 minutes. Remove from the oven and tip into a large pan. Add the stock and simmer for another 20 minutes. Blend and serve with a good dollop of zero-fat natural yoghurt.
