Ingredients
- 1 lb Chicken
- Marinade
- 1 Crushed garlic clove
- 2 tbsp Light soy sauce
- Pinch Cayenne Pepper
- 1 tsp Ground ginger
- 1tbsp Lemon juicee
- 1 tbsp Cooking oil
- Sauce
- 1 tsp Oil
- 1 Clove Garlic
- ΒΌ Onion
- ΒΌ tsp Cayenne pepper
- ΒΌ tsp Salt
- 5 fl oz Water
- 2 oz Smooth peanut butter
- Β½ tbsp Lemon juice
- ΒΎ tsp Medium brown sugar

Makes a great starter or finger food for a buffet

1. Cut chicken into 1" cubes
2. Whisk all marinade ingredients together and pour over chicken. Refridgerate and leave for at least two hours
3. When ready to cook, heat grill and put chicken on short skewers
4. Grill kebabs for about 6-7 mins turning once or twice so cook evenly
5. While the kebabs are cooking make the sauce
6. Put the oil in a small pan and add the crushed garlic and chopped onion the cayenne pepper and the salt. Fry for about a minute then add water and bring to boil.
7. Add peanut butter, lemon juice and sugar stir well and continue to boil until the sauce is thick enough to coat the back of a spoon.
8. Serve the kebabs either with the sauce on the side or poured all over
