For a non-alcoholic version, make with sparkling water instead

Mix together the lime juice and elderflower cordial in a small jug. This will be enough for 8 spritzers.
Fill tall glasses with some ice, wedges of lime and mint leaves.
Add the lime and elderflower mixture (one eighth per serving) and top up with the sparkling wine. Stir briefly to combine and serve straight away.
Chef's Tips
For a non-alcoholic spritzer, replace the sparkling wine with soda water.
