Preheat the oven to 190Β°C/gas 5. Place the lemon zest and the juice in a saucepan with 2tbsp of the golden syrup, the light brown sugar, the butter and 125ml of cold water.
Gently bring to a simmer, then remove from the heat and leave to cool slightly.
In a large bowl, mix together the flour, suet, salt and about 150ml cold water to form a soft, pliable dough. Roll out on a surface lightly dusted with flour to about 25cm square, 5mm thick. Peel, core and dice the apples into roughly 1cm cubes and then scatter these over the pastry. Drizzle the remaining golden syrup on top.
Roll up the pastry into a cylinder shape and cut into 2.5-3cm thick circles. Place the slices of cake so that they are slightly overlapping in a buttered 1.2ltr oven dish.
Pour the lemon syrup mixture evenly over the top and place in the oven for 30-40 minutes until the pudding is golden. Serve hot with custard.
Chef's Tips
Try sprinkling a few handfuls of raisins, sultanas or chopped dried apricots in with the apples.
