- 4 large onion. chopped

Brown chops in large saucepan
Add onions and brown
Add carrots
Add stock
Season with Salt and Pepper
Bring to Boil and then reduce to simmer for 1 hour
Add potaoes and simmer for further 1 hour, or until vegetables softened
Add leeks and simmer for further 20 minutes
Coarsley chop parsley and simmer for 10 mins
Serve with crusty bread
