4 medium courgettes
1 large clove garlic peeled and chopped
1 tbsp olive oil
Juice of 1 lemon or to taste
2 tbsp chopped mint
1&#8260 2-1,red chilli finely sliced to taste

Preheat a frying pan or ridged griddle.

Trim and thinly slice the courgettes lengthways, then toss with the garlic and olive oil to coat.

Cook the courgette slices in batches for about 3 minutes each side. Arrange on a serving plate, squeeze over the lemon and scatter with mint and finely sliced chilli. Serve with the chicken pesto or other grilled meats.
