Muscat Beaumes de Venise Sweet Wine

Beaumes is famed for its wine made from the Muscat grape. Rich, sweet and luscious with a touch of white flower on the finish. A delicious and subtle dessert wine. Buy this wine if you like: Sweet dessert wines that are lighter in style.

Method

  1. 1

Preheat the oven to 190C/170C fan/gas 5. Peel, halve and core the pears. (Tip: for smooth pears without peeling lines, rub with a clean tea towel after peeling.)

Put the honey, sugar, orange and lemon peel, lemon juice and 250ml water into a roasting tin and bring to a boil on the hob.

Split the vanilla pod and scrape the seeds into the tin, add the pod itself and stir through. Add the pear halves, cover with foil and bake in the oven for 30 minutes, or until tender.

Leave the pears to cool in their syrup. Serve with double cream, crรจme fraรฎche or yoghurt.

Chef's Tips

Serve in a large white dish with the syrup poured over โ€“ the white plate will emphasise the deep gold colour of the juices.
