Couscous is the perfect accompaniment to pork and it's so versatile.

Lightly toast the flaked almonds in a dry pan and leave aside. Heat up the chicken stock and add the olive oil. Place the onion and couscous in a bowl and pour in the stock and oil.
Gently stir through, then cover tightly with clingfilm and leave for about 5 minutes, until the couscous swells up and absorbs the liquid.
Fluff it up with a fork, add the toasted almonds and a sprinkling of salt flakes and freshly ground pepper, then serve.
