Ingredients
- 1 medium slice white bread plus full-fat milk to soak
- 2 medium onions
- 2 cloves garlic
- 2cm piece fresh ginger
- 25g butter
- 2tsp garam masala
- 1tsp ground cumin
- 1tsp ground coriander
- 2 cloves
- 2tsp ground allspice
- 1tsp dried herbs
- 500g minced lamb
- 1 ยฝ tbsp malt vinegar
- 50g dried apricots
- 50g sultanas
- 25g flaked almonds
- 3tbsp mango chutney
- 4tbsp chopped parsley
- 2 bay leaves
- 250ml full-fat milk
- 3 large eggs
- salt and black pepper
- 4 thin lemon slices
- 2 bay leaves

1. Preheat the oven to 180C/160C fan/350F/gas 4. Soak the bread in just enough milk to cover, then mash with a fork. Put to one side.
2. Peel and finely chop the onions and garlic. Peel and grate the ginger. Melt the butter in a large saucepan over
a low-medium heat and cook the onions and garlic for 5-7 minutes, until softened. Stir in the ginger, garam masala, turmeric, cumin, coriander, cloves, allspice and herbs and cook for 1-2 minutes.
3. In a separate pan, fry the lamb mince on a medium heat until coloured, breaking up any lumps. Drain off the excess fat and add to the onion mixture with the mashed bread and the malt vinegar. Heat this all together, mixing well.
4. Chop the apricots, then stir them in with the sultanas, flaked almonds, mango chutney, parsley and bay leaves. Tip the mixture into a medium-sized ovenproof dish, press it down firmly, then set aside while you make the topping.
5. Beat the milk and eggs together, season with salt and pepper and pour over the top of the mince. Put the lemon slices and bay leaves on the top. Place in the oven and cook for 30-35 minutes until the tophas set and is golden.
