- 2 chicken breasts
- ½ onion
- 1 red pepper

- 2 tomatoes
- 2 tbsp olive oil

1. Preheat oven (200°C). Lay all the vegetables and tomatoes in a shallow roasting tin. Space out evenly. Poor over the olive oil, coating all the vegetables well.
2. Top with the chicken and rosemary. Season with salt and pepper, and drizzle a little oil over the chicken. Roast for 35 minutes until the vegetables are soft, and chicken is golden. Drizzle with oil before serving.
