- 4 Large Tomatoes

Description
Tasty and easy but a great informal dish for friends, particularly good on a winter's evening.

1. Take two large peppers, wash, split in half, core and lay on a piece of foil on a baking tray.
2. Take four large-ish tomatoes, drop in recently boiled water, drain and remove skin; cut each in four and place in the peppers.
3. Cut a few cloves of skinned fresh garlic into chunks and also place into the tomatoes.
4. If not a vegetarian, spread a little anchovy paste around the insides of the peppers.
5. Drizzle a little olive oil into the peppers/over the contents.
6. Season a little and place into a medium oven.
Serve with small chunks of fresh bread to dip into the juices, and finish by eating the peppers.
