Preheat oven to 200°C/gas 6. Put 4tbsp oil, 2 crushed garlic cloves and 600g chopped tomatoes in 2 large roasting tins.
Add 2 chopped red onions, 2 chopped red peppers, 1 chopped green pepper and 3 chopped courgettes.
Toss, season and roast for 45 mins, until tender. Mix the contents of both roasting tins and drizzle with extra olive oil and a generous sprinkling of basil and grated Parmesan.
