Description

The crumbley rich pastry and fresh fruit with a tangy Lime Jelly make this pie one of our favorites. Typical Summer Fare. Enjoy

Method

    Sift the salt and flour together.Fingertip rub the Butter in to resemble breadcrumbs. Add the Yolk, Sugar, Lemon Juice and Water. Kneed to stiff dough. Clingfilm wrap and refrigerate for one hour.
    Rollout to 6mm thick and cut some 25mm wide strips to form the side collar. Kneed and roll out the rest othe pastry to 4mm to line the bottom of a 20cm baking dish Form the sides using the Pastry strip. Sealing with egg white(use a pastry brush)
    Embed Almonds into the pastry collar.
    Wash over with egg white
    Prod the base pastry with a sharp knife to prevent baking distortion
    Bake Blind at about 200c for about 20 min . Almonds should be Golden Brown

    The Filling
    Peel and slice the peaches (discard the stone) place in the blind pastry case.
    Scatter the berries on top. Place in the refrigerater
    Make the Jelly to packet instructions But only 3/4 of the recommended water. Place in the refigerater until cold to point of setting. Remove the pie and Pour the Jelly carefully to the pie brim

    Of course you can use ready rolled pastry,though I prefer to make my own.

This looks like a very tasty dish. And quite unusal too!! Where to you come across it? Or is one of your own creations?
