I hate wasting food, i had some left over quinoa from the night before and so decided it would work well in a pepper,

Method

  1. 1

    1. Cook the quinoa normally takes 10-15 minutes.

    2. While thats cooking mix up your miso soup, fry up your mushrooms.

    3. Once the quinoa is cooked poor in the miso soup, cooked mushrooms, spring onions (sliced) and stir in the prawns aid chilli oil (depending on how hot you like)or you could add fresh chilli's ( i actually had this the night before as a meal on its own which is also lovely and used the rest to put in the pepper).

    4. Cut the top off the pepper but keep it to use as a lid and deseed, tear a sheet of baking foil large enough to wrap up the whole pepper, drizzle a little olive oil over the the empty pepper.

    5. Fill the pepper with the quinoa mix replace the lid and wrap up the pepper.

    6. Place in a pre heated oven 180 degress for 1 hour but keep an eye on it.
    The pepper should be soft and a browned, i had mine with a nice green salad.
