- 3oz demonrara sugar
- 1 cup oil
- 1 cup syrup
- 1 cup black coffee
- 12oz self raising flour
- 1 tsp ground ginger
- 1 tsp cinamon
- 1 tsp baking powder
- ½ tsp bicarbonate of soda

This is my mum's recipe. She got it from a friend of hers when I was young and I can honestly say i've NEVER tasted better!!!

1) Mix all the ingredients together
2) Cover the base of the dish with greaseproof paper
3) Transfer the mixture into a baking dish and pre-heat oven to 350 and bake for one hour.
