Tuscan Tomato Soup [Pappa Al Pomodoro]
Ingredients
- 3 cloves garlic. thinly sliced
- 2 tspns fresh sage leaves finely chopped
- 6 medium tomato. finely chopped
- 400grm Tinned Chopped Tomatoes
- 1 ciabatta roll cut into bite sized pieces
- 800 ml chicken or vegetable stock
- basil leaves
- Freshly Grated Parmesan Cheese
- 1 or 2 tbspn olive oil to fry
- extra virgin olive oil for drizzling

Description
This is a traditional Tuscan soup,flavoured with sage, basil
& thickened with ciabatta. Delicious served hot or at room temperature.
Method

1.Heat olive oil in a large pan, add garlic & chopped sage leaves, cook for 1 to 2 minutes until garlic is golden.
2. Stir in the fresh tomatoes then tinned tomatoes and ciabatta. Stir well and season to taste with salt and freshly ground black pepper.
3. Pour in the stock, bring to boil and then simmer for 45 minutes, stirring occasionally.
4. Check seasoning.
5. Serve with grated parmesan, basil leaves and drizzle with olive oil.
