- 5 Slices Smoked Bacon
- 250g Broad Beans Shelled
- 1 Fresh Lemon Juiced
- 1 Tbsp Extra Virgin Olive Oil
- 1 Handful of Fresh Mint
- 100g Feta Cheese
- 100g Rocket/Salad Leaves

Delicous and healthy starter or week day supper

1. Chop up the bacon and fry until crisp, and then add to the shelled and briefly blanched broad beans.
2. Make a simple dressing with equal amounts of lemon juice and extra virgin olive oil, then mix in some roughly chopped fresh mint. Stir this into the bacon and beans. Finally cut the feta cheese into cubes and add to the mixture.
3. Serve on a bed of leaves, rocket my favourite with fresh crusty bread.
4. Can serve hot or cold.
