- 1 - finely diced Red onion
- 10 - chopped Green olives
- Med bunch - chopped Fresh parsley
- 2tbs Extra virgin olive oil

This is a great lunch to take to work, cheap and healthy too! Also perfect for picnics or as an addition to a BBQ.

Prepare couscous as per pack instructions. Tesco, Ainsley Harriot and sammy's all have good versions of this flavour which work well.
When ready, transfer to a large dish and mix in the olive oil.
Place remaining ingredients into the bowl and mix well.
Done! This keeps well overnight so perfect to prepare and take in a lunch box the next day.
