Ingredients
- 2 Whole Fish (Sea Bass, Sea Bream)
- 4 Cloves garlic (finely chopped)
- ยฝ Tsp Coriander (Ground)
- ยฝ Tsp Turmeric (Ground)
- ยฝ Tsp Chilli Flakes
- 1 Tsp Cumin Seeds
- 1 Tablespoon Butter
- ยฝ Tsp Salt
- 1 Lemon
- 1 handful Fresh Coriander (chopped)

This dish takes minutes to prepare, can't go wrong and looks and tastes really impressive... good when you have guests!

Mix the spices, garlic and salt in a bowl, add the butter and put it in the oven for ten minutes or so while it heats up to 200c
Meanwhile, score the fish 3 or 4 times on each side depending on the size.
Slice the lemon and insert a slice or two inside each fish. Put the rest aside to use later.
When the spices & butter have roasted for a few minutes, take them out of the oven, stir together well and rub the mixture over the fish, including the inside, with a teaspoon.
Put the fish on a baking tray in the oven for about 15-20 minutes until cooked.
Garnish with fresh coriander and serve whole with crushed new potatoes and spinach, or rice & steamed green beans.
This would also work well on a BBQ but you would have to rub the spice mix on the top first, cook covered for 10 minutes and then turn, coat the other side and cook for another 10.
