The perfect festive nibble, full of rich aroma, almonds, rosemary, garlic and chilli with a delicate honey flavour. Almonds with a tiny bite!

Using a heavy bottomed frying pan, lightly roast the almonds in the olive oil and knob of salted butter together with the sprigs of rosemary, crushed garlic (use a garlic crusher) and salt. Roast till almonds begin to brown, add the chilli flakes and fold in the honey. The result is a lovely aromatic glistening nuts. The perfect accompaniment with a glass of wine!
Chef's Tips
..... avoid high heat, gentle heat with continuous staring to evenly roast the almonds, it will also prevent the the rosemary burning, the essential oils and aromas will be slowly released. Serve warm or cold. Store in an air tight container. Will keep for a few days.
