Ingredients
- 4 Chicken legs halved
- 2 tsp Ground Paprika
- Β½ cup Olive oil
- 2 Small onion
- 6 Garlic cloves thinly sliced
- 5oz Chorizo sausage sliced
- 4oz/1 can Chopped tomatoes
- 12-16 leaves Bay leaves
- 5 tbsp Medium Sherry
- Freshly ground Salt and pepper
- Boiled rice or potatoes

1. Preheat the oven to 180c/375f/gas mark 5. Coat chicken pieces in the paprika, making sure that they are evenly covered, then season with salt. Heat the olive oil in a frying pan and fry the chicken until brown.
2. Transfer to an ovenproof dish. Add the onions to the pan and saute quickly. Add the garlic and sliced chorizo, and fry for about 2 minutes.
3. Add the tomatoes, 2 of the bay leaves and the sherry, and bring to a boil. Pour onto the chicken and cover with a lid. Bake for 45 minutes.
4. Remove the lid and season to taste. Cook for another 20 minutes, until the chicken is tender and golden. serve with rice or potatoes, garnished with bay leaves.
Hi There! Cooked this last week - very tasty and easy. There was some left over and it was even tastier the next day! I used cabanos spiced sausage which I already had and it tasted very similar. Yum!
